What is Food Sensitivity?

Food sensitivity can be divided into two major groups: immediate reactions and delayed reactions. These two groups are led by different immune system responses.

Immediate reaction

Symptom onset for an immediate reaction is rapid - usually within 8 hours of eating the offending food. Symptoms can include tingling of arms and legs, rash, wheezing, nausea, vomiting, abdominal cramps, and anaphalaxia (difficulty or inability to breath). This immediate reaction is due to an IgE (Immunoglobulin E) response.

Delayed reaction

Symptom onset for a delayed reaction is much slower. Symptoms may not appear for up to three days. The food you ate on Monday could be responsible for the migraine that showed up on Wednesday! The delayed reaction is due to an IgG (Immunoglobulin G) response. Because of this delay, some people are unaware of the foods to which they are sensitive. To further compound the problem, traditional allergy panels only evaluate an IgE response, never testing for an IgG response. This gives a patient incomplete information and can ignore a true food sensitivity.
